Spring mornings are still a bit crisp and having comfort food like French Toast is a great way to start your day or host a Sunday brunch.  Drizzle this creation with real maple syrup or organic powdered sugar with a bit of cinnamon.


  • 1/2 cup of oat, almond or nonfat soy milk
  • 1 ripe banana, cut up
  • 1 tablespoon nutritional yeast flakes (optional)
  • 1 teaspoon vanilla extract
  • Pinch of ground nutmeg
  • 5 slices of whole-wheat or whole-grain bread
  1. Whirl the milk, banana, yeast flakes, vanilla and nutmeg in a blender until smooth
  2. Dip both sides of the bread in the mixture
  3. Cook on a preheated non-stick griddle until brown on both sides or on a nonstick baking sheet in the oven at 400- degrees, turning once until done.

Consider replacing syrup with fresh fruit compote.  If you need a bit more sweetness consider using monk fruit for either the batter or the fruit compote.
