Food Is Medicine – Carrot Cookie Cake

This cake is a bit dense, has great texture and wonderful flavor. Create a low sugar recipe of your choice to frost between layers and on top to keep it as a healthy treat.  Consider cutting one of the rounds in wedges and wrapping each separately to freeze for future snacks.

  • 1 1/2 cups whole-wheat flour
  • 1/2 cup Grape-Nuts cereal
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup maple syrup, honey, or monk fruit
  • 2 eggs or egg replacement
  • 1 cup shredded carrots
  • 1 8-ounce can crushed pineapple, drained
  • 1/4 cup raisins
  • Frosting of choice
  1. Preheat oven to 350 degrees.
  2. Mix the first four ingredients well in a medium bowl.
  3. Scrape batter into two greased and floured prepared 9-inch round cake pans or one 9 x 13-inch pan and bake for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  4. Once cooled, frost cake with a frosting of your choice.
