This cake is a bit dense, has great texture and wonderful flavor. Create a low sugar recipe of your choice to frost between layers and on top to keep it as a healthy treat. Consider cutting one of the rounds in wedges and wrapping each separately to freeze for future snacks.
- 1 1/2 cups whole-wheat flour
- 1/2 cup Grape-Nuts cereal
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup maple syrup, honey, or monk fruit
- 2 eggs or egg replacement
- 1 cup shredded carrots
- 1 8-ounce can crushed pineapple, drained
- 1/4 cup raisins
- Frosting of choice
- Preheat oven to 350 degrees.
- Mix the first four ingredients well in a medium bowl.
- Scrape batter into two greased and floured prepared 9-inch round cake pans or one 9 x 13-inch pan and bake for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
- Once cooled, frost cake with a frosting of your choice.
