What makes this pudding healthy is the short list of simple ingredients. Avocados are full of healthy fats and rich in minerals, vitamins and fibers. Coconut oil has a plethora of health benefits – but be aware that it has a cooling effect in the body and is best used on warm days. Maple syrup is rich in minerals and antioxidants, and lower on the glycemic index than refined sugar. If you have blood sugar issues, substitute for monk fruit. Cocoa powder is a natural mood booster. For the most benefits, use ingredients that were grown using organic or regenerative agricultural practices.

4 Ripe avocados
½ C Coconut oil, melted
½ C Honey or Maple Syrup
½ C Cocoa powder (unsweetened)
Vanilla Extract (optional)

  1. Blend Avocados and oil until smooth
  2. Add honey, vanilla & cocoa powder and blend until smooth
  3. Chill for 1 hour or more
  4. Garnish with fresh berries and cocoa nibs
  5. Enjoy!

Store in the fridge in an airtight container for up to 4 days.
Tip: Only use avocados that are green and soft. If they are brown and stringy, they have an unpleasant scent that you will taste in the pudding.
