Sometimes we just don’t have time to fix breakfast. That may create a need to go through a drive-thru to pick up some coffee and a quick breakfast item. If you take your own coffee and grab one of these cookies you can save yourself about $6 to $8 and have a healthier meal. The recipe is easy and will make about 10 cookies. I added monk fruit to sweeten them a bit more but that is an optional step. The cookies can be stored in the refrigerator for about a week or you can freeze them. Be sure to wrap each cookie individually so they don’t stick together and are easy to grab and go.
- Heat oven to 350 degrees
- 2 ripe bananas, mashed
- 1/2 cup almond butter
- 1/4 cup chopped nuts and/or dried fruit
- 1 egg
- 2 teaspoons cinnamon
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup monk fruit, optional
- In a large mixing bowl mash the bananas
- Add other ingredients.
- Chill the dough for one hour in the refrigerator. This helps keep it from spreading out to thin during baking.
- Drop two to three tablespoons of batter per cookie on a parchment covered cookie sheet and spread out a bit with the back of the spoon.
- Bake at 350 degrees for 10-12 minutes or until lightly brown.
- Allow cookies to cool in place on the cookie sheet. It is helpful to use a metal thin-edged spatula when removing the cookies to avoid tearing the cookie. Cookies will be soft.
