Watermelon, Cucumber & Avocado Salad Recipe

Ingredients (for 2 people)
- 2 cups watermelon, cubed
- ½ large cucumber, cubed
- ½ avocado, cubed
- ¼ cup crumbled feta
- 1 Tbsp fresh mint, torn
- 1 Tbsp fresh basil, torn
- 1 Tbsp balsamic vinegar
- 1 Tbsp extra-virgin olive oil
- Sea salt and freshly ground black pepper to taste
Optional: a handful of pumpkin seeds or chopped almonds
Directions
- Gently combine the watermelon, cucumber, avocado, mint, and basil in a large bowl
