This simple four-ingredient salad is super refreshing and hydrating, perfect for a hot summer evening or as part of a light lunch. It pairs well with pita bread and fish dishes and is a favorite in my house.

Cucumber Yogurt Salad Recipe

Ingredients (for 2 people)

  • 1 medium size cucumber
  • 2 tbsp plain/unsweetened grassfed milk yogurt
  • 1 tsp fresh or dried dill
  • Salt to taste

Directions

  1. Peel cucumber and grate into thin slices with the coarse blade of the grater.
  2. Add 1 teaspoon of dill, and salt to taste.
  3. Add about 2 tablespoons of yogurt to the cucumber and combine well.
  4. Garnish with a dill sprig or a couple of cucumber slices.
  5. Enjoy.

Cucumbers are particularly beneficial for hydration; they are also low in calories and provide essential nutrients like soluble fiber, vitamin K and C. Dill provides a nice flavor as well as antioxidant and anti-inflammatory properties, and is great for digestion. Yogurt adds healthy fats, several minerals and vitamins, and a plethora of beneficial microbes to this simple side dish.
